Hakata Nagahama Ramen Tanaka Shoten is a Hakata Nagahama tonkotsu specialist that opened in Adachi City in December 2000. On 5 August 2025 it moved from Hitotsuya to Hanahata, and now operates at 1-16-11 Hanahata. Hours run from 6 p.m. to 4 a.m. Older listings still carry the previous address, so it is worth confirming where you are headed before you set out.

What kind of shop it is

According to the official site, Tanaka Shoten opened in Adachi City in December 2000. It has been boiling pork bones for more than two decades since, and has expanded a sibling brand, Chuka Soba Senmon Tanaka Soba-ten, across Tokyo and Saitama. The Hakata Nagahama style, however, belongs to this original Adachi shop.

The official description calls the soup "a classic broth simmered for three days, from the pig's head to its trotters." In an interview with Ramen Walker, owner Tsuyoshi Tanaka — originally from Aomori — explains that he uses the yobimodoshi method, topping up the pot with broth drawn from a separate stockpot to build the aroma and depth particular to tonkotsu. His motto, as quoted in that article, is "kusai, katai, umai" — pungent, firm, delicious. The noodles, per the official site, are ultra-thin and shipped directly from Fukuoka; Adachi Kanko Net notes you can choose from four firmness levels, on a page whose details are dated 5 June 2018.

What to order

The official menu lists four ramen at Tanaka Shoten: ramen, negi ramen, chashu-men, and negi chashu-men. The official copy describes negi ramen as a bowl whose surface is "blanketed in fine green onion," and chashu-men as using pork belly "seared in a special kiln and steeped in a house tare." Sides include mentai gohan (rice with spicy cod roe), a Korean-style version, kaedama (an extra portion of noodles), and an item called "Aka Oni."

On a first visit, the plain ramen is the clearest way to read how the three-day broth meets those ultra-thin noodles, with a kaedama afterwards at a different firmness. Note that the official site states items and prices may differ by location and does not publish prices; check the official site or social media for the latest.

Tips for visiting

The official site gives the hours as 18:00–04:00, Monday through Sunday. Adachi Kanko Net describes the shop as open year-round with last orders at 4 a.m., though that page's details are dated 5 June 2018. There is no lunch service — this is an evening or late-night bowl.

The shop is not near a station. Adachi Kanko Net puts it about 25 minutes on foot from Takenotsuka Station on the Tobu Skytree Line, while local outlet Yashion reports roughly 11 minutes by car from Yashio Station. Mind the maps: the "route guidance" link on the official shop page still points at the pre-move coordinates and will route you to the old Hitotsuya site. Search for the shop name together with "Adachi-ku Hanahata," or enter the address 1-16-11 Hanahata directly.
