Three minutes on foot from the East Exit of Shinjuku Station, Ramen Hayashida Shinjuku Honten is a flagship of Tokyo's "neo-classic" shoyu (soy sauce) ramen movement, known for a broth simmered generously with duck and whole Daisen chicken. Opened in 2017 as the brand's first shop, it reopened in March 2025 after a renovation, now inside the Shinjuku Pegasus Building.

What kind of shop it is

Hayashida is run by INGS Co., Ltd. (headquartered in Shinjuku), the company behind the rich niboshi (dried sardine) ramen shop Suzuran. This Shinjuku location opened on December 19, 2017 as the brand's first store. According to the operator's press release, it was selected for Tabelog's "Hyakumeiten" (Top 100 restaurants) three years running from 2018 to 2020, and the brand has since grown into a group with sister shops in and beyond Tokyo. The main shop closed for renovation on December 25, 2024 and reopened on March 6, 2025.

If Tokyo's long-running chuka soba institutions (such as the old-school shops of Ogikubo) represent the classic style, Hayashida's bowl — layered carefully with duck and whole-chicken stock — is a defining example of the refined "neo-classic" shoyu that emerged in the 2010s. Trying both makes the evolution of Tokyo soy sauce ramen easy to taste.

What to order

The signature is the shoyu ramen. According to the official site, the broth is simmered with duck and whole Daisen chicken used without restraint, and the noodles blend several select wheat flours for firmness and a smooth finish. A Gurunavi feature describes them as thin, straight, low-hydration noodles with whole wheat, with chicken oil adding depth to the soup.

In September 2023 a shio (salt) ramen joined the menu at all shops (¥1,200 tax incl. at launch), and bowls featuring nodoguro (blackthroat seaperch) are also popular. Since the official site does not publish a price list, check the latest prices displayed in the shop.

Tips for visiting

Hours are 11:00–23:00, open daily (per the official site, as of July 2026). For Shinjuku, it is a rare quality shoyu ramen shop running straight through until late evening — convenient after shopping or a night out.

The official site lists access as a 3-minute walk from the East Exit of JR Shinjuku Station, an easy stop on the way to the Shinjuku-sanchome area. Temporary closures and limited-edition bowls are sometimes announced on the official X and Instagram accounts, so checking before your visit is a safe bet.
